Key Lime Pie



Need a yummy St Patty's day treat?! Yesterday we celebrated the birthday of my oldest son. He requested his favorite key lime pie. Now, I don't like to brag but well....this is the best key lime pie you'll ever have! I won't tell you that it was fought over at a church auction and sold for $150! Oops, I guess it's out of the bag now. ๐Ÿ˜‰As for my secret ingredients....here they are in full disclosure! Enjoy! <3๐Ÿ’—Emily        
Emily's Famous Key Lime Pie๐Ÿ…
Preheat oven to 325 degrees


Crust:
1.5-2 pkgs graham crackers
4 TBL Sugar
1/2-3/4 stick butter (for firmer crust add more, for softer add less)
1/4 tsp sea salt


Filling:
4 organic egg yolks
1 can condensed milk
2/3 c key lime juice (I use Nellie & Joes)
10 drops doTERRA lime essential oil


Topping:
1 c organic heavy cream chilled
2 TBL powered sugar
1/2 tsp vanilla 


๐Ÿ‹Put crackers into a blendtek blender and blend until desired consistency. Empty crumbs into a medium bowl and add butter (melted), sugar and salt. Mix well and press into pie dish. Bake for 10 min. ๐Ÿ‹While crust is baking, whisk yolks & lime EO on high speed until fluffy (about 3 minutes). Slowly add condensed milk and whip until thick. Then incorporate key lime juice. Add mixture to baked crust and bake for 15 minutes or until filling has set. Cool on wire rack or chill in fridge. ๐Ÿ‹Topping: In a chilled bowl...Whip the cream, sugar and vanilla until nearly stiff. Evenly spread on top of the pie and place in freezer about 20 minutes prior to serving!
